Laura and I made these Peanut Butter Bars on Friday when we had a night to catch up. These aren't your ordinary Peanut Butter Bars.... no, no no... they are rich and certainly a whole lot more. I'd honestly reduce the icing/frosting in half to balance it out. We LOVED the batter for the bars and may have had to control ourselves from just eating that sans the baking part.
Dad - you'll love these! They'd be great with a chocolate ganache too or maybe a thin brownie layer to add the chocolate touch with the peanut butter.
Note: we did a full batch in a 9x13 pan to make them thicker and chewier. They were really rich and certainly to be enjoyed with a big glass of milk. The recipe is from

The BEST peanut butter bars1 cup butter
1 cup white sugar
1 cup brown sugar
2 eggs
2/3 cup peanut butter
1/2 cup milk
1 tsp vanilla
1 tsp baking soda
2 2/3 cup quick oats
2 2/3 cup flour
Mix all ingredients together and bake in a sheet cake pan at 350 for 20 minutes. Let cool completely and frost with peanut butter frosting. Keep stored in the fridge.
For the frosting-whip all together;
1 8oz package of softened cream cheese
1/2 cup peanut butter
1/4 cup milk
1 1/2 lb. powdered sugar
Also this recipe is easily halved and fits perfectly into a 9x13 pan.

So... It kind of bothers me when people post on food blogs that either they were too busy to take a picture or if they couldn't help but finish the entire pan before taking a picture because it was just "that good". It never seems genuine to me. But honestly.... Laura and I whipped these bars up last Friday. We chatted into the night, delivered some to the nice guys who invited us over to dinner, ate a few more along the way, and then I realized I only had a few left. They're rich, addicting, and wonderful. Just make them... you'll understand.
